Duck Skewer with date,

PREPARATION :
Stone the fruits. Thread the duck inner fillet on to a wooden or bamboo skewer and insert between each fold a fruit in turn – e.g. one apricot, one date and one prune.
In a hot frying pan, brown the duck skewer in butter, season with salt and pepper and cook for 1min30 on each side.
